How do you feel about drinking a beer made from food destined for landfill? Northern Monk Brewery Co, which is based in Leeds, has made the world’s first ‘zero waste’ beer using overripe pears, stale croissants and other food that would otherwise be tossed. The ingredients are used to add sugar to the brewing process but they also add a unique flavor to the drink.
After the hops have been used, the company donates them to farms and allotments to use as fertiliser. The grain is given to a worm farm to use as feed. ‘Brewing beer naturally creates waste so we wanted to find a way to change that,’ said brewery founder Russell Bisset. ‘We saw this as an opportunity to challenge pre-conceived notions of what beer can be made with and highlight the kinds of products that go to waste on a daily basis.
